- Lettuce or mixed greens — 1 cup
- Tomato — 1, diced

Instructions

- Chill the mixture in the fridge for 15-20 minutes — this helps the falafel hold together better when shaped and baked.
- Shape into small patties or balls, about 1.5 inches each.
- Place on a baking sheet, brush lightly with olive oil, and bake for 20-25 minutes, flipping halfway, until golden and firm on the outside.
- While the falafel bakes, whisk together tahini, lemon juice, garlic, and salt, adding water gradually until pourable.
- Warm the flatbread briefly in a dry pan or oven.
- Fill each wrap with lettuce, tomato, cucumber, red onion, and several falafel patties.

Tips for Falafel That Holds Together
- Don't skip the chilling step: this is genuinely one of the most common reasons homemade falafel falls apart — the mixture needs time in the fridge to firm up before baking. Skipping this step, even when you're in a hurry, tends to backfire.
- Don't over-process in the food processor: pulse rather than run continuously — a completely smooth, paste-like mixture doesn't hold its shape as well as one with some visible texture.
- Press firmly when shaping: compact the mixture firmly when forming patties, since loosely packed falafel is more likely to crumble during baking.
Tips for Wrap Assembly
- Warm the flatbread: cold flatbread cracks when folded — a brief warm-up makes it pliable and easier to wrap tightly.
