  • Garlic — 2 cloves, minced
  • Tomato paste — 2 tablespoons
  • Frozen peas — 1/2 cup

  • Olive oil — 1 tablespoon

Mashed Potato Topping

  • Potatoes — 4 medium, peeled and cubed
  • Plant-based milk — 1/4 cup
  • Vegan butter (or olive oil) — 2 tablespoons
  • Salt — to taste

Instructions

  1. Boil the cubed potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash with plant-based milk, vegan butter, and salt until smooth. Set aside.
  2. While the potatoes cook, heat olive oil in a large pan over medium heat. Add onion, carrot, and celery, cooking for 5-6 minutes until softened.
  3. Add garlic and cook for another minute.
  4. Stir in the dry lentils, vegetable broth, tomato paste, thyme, and Worcestershire sauce.
  5. Bring to a simmer and cook, uncovered, for 20-25 minutes, stirring occasionally, until the lentils are tender and the mixture has thickened. Add the frozen peas in the last 3 minutes.
  6. Season the lentil filling with salt and pepper. Transfer to a baking dish.
  7. Spread the mashed potatoes evenly over the top, using a fork to create ridges (this helps the top brown nicely).
  8. Bake at 400°F (200°C) for 20-25 minutes, until the top is lightly golden.

Tips for the Best Texture

  • Don't undercook the lentils in the filling stage: they should be tender before baking, since the baking step is mainly for browning the top rather than finishing the cooking.
  • Create ridges in the mashed potato: dragging a fork across the surface before baking gives the peaks more surface area to brown and crisp slightly, which adds a nice textural contrast to the soft filling underneath.
  • Let it rest for 5-10 minutes after baking: this allows the filling to set slightly, making it easier to serve clean portions rather than having it spread out too loosely.

A Note on Iron and This Dish

This pie leans on tomato paste as its vitamin C contributor, which helps somewhat with the lentils' iron absorption, though it's a smaller amount than a fresh squeeze of citrus would provide. If iron intake is a specific focus for you, consider serving this with a side salad that includes bell pepper or a citrus-based dressing to round out the meal.
