Instructions
- In a large bowl, combine rolled oats, milk, and yogurt. Stir well.
- Grate the apples directly into the mixture (leaving the skin on adds fiber and texture), and immediately toss with lemon juice to prevent browning.
- Stir in honey, chopped nuts, dried fruit, and cinnamon.
- Cover and refrigerate overnight, or for at least 4 hours.
- In the morning, give it a good stir — the mixture should be thick and creamy, with the oats fully softened.
- If it seems too thick, stir in a splash more milk to loosen it.
- Divide into bowls or a large serving dish, and top with fresh berries just before serving.
Tips for the Best Texture
- Grate the apple, don't dice it: grating releases more of the apple's moisture into the mixture, which helps soften the oats more evenly than diced pieces would.
- Toss the grated apple with lemon juice immediately: this isn't just about brightening the flavor — it genuinely prevents the apple from browning and looking unappetizing by morning.
- Full-fat yogurt gives a creamier result: similar to the Greek yogurt bowl earlier in this series, a richer yogurt makes a noticeable difference in how creamy the final texture turns out.
- Adjust the milk-to-oats ratio to your preference: some people prefer a thicker, almost pudding-like muesli, while others prefer it looser — this recipe leans toward the thicker end, so feel free to add more milk if you prefer.
Serving This as a Brunch Spread
